Soybeans are native legumes of East Asia and are known as an oilseed. Due to their high protein and fat content, soybeans are considered the most common source of plant protein worldwide and are a desirable option for human consumption and animal feed.

Soybeans consist of two cotyledons, which make up approximately 90% of their weight, and include a hull (about 8% of the seed weight) and two smaller and lighter structures: the hypocotyl and cotyledon.
